Carrot Cake
Yield: 1 8” square baking pan – 12 servings
Ingredients:
¾ cup All Purpose Flour
¼ cup Quick cooking Oats
1 ½ tsp Ground Cinnamon
1 tsp Baking Powder
½ tsp Baking Soda
¼ tsp Salt
1 c Granulate Sugar
¼ c Canola Oil
2 ½ oz Pureed Carrot
2 large Eggs, lightly beaten
1 ¼ c Finely Shredded Carrot
½ c Golden Raisins
Preheat oven to 325°F. Prepare an 8x8 square cake pan with non stick cooking spray.Into a large mixing bowl add flour and next 6 ingredients.
In a separate bowl combine granulated sugar, oil, eggs, and carrot puree, whisk until combined.Add wet mixture to dry ingredients. Stir just to combine. Add grated carrot and raisins, mix to combine. Be careful not to overmix.
Spoon batter into the prepared pan and bake for 40 minutes or until a toothpick comes out clean. Cool in pan on a wire rack.
