Mango Lemonade

INGREDIENTS


  • 3/4 cup granulated sugar

  • 3/4 cup water

  • 2 mangos, peeled, pitted, and chopped

  • 1-1/2 cups fresh lemon juice

  • 3 cups lemon-flavored sparkling water or 1 bottle prosecco or Sparkling Rose



DIRECTIONS


  1. In small saucepot, stir together sugar and water. Cook over medium heat 4 to 6 minutes or until sugar is dissolved. Remove from heat; let stand 10 minutes.

  2. In blender, puree mangoes and lemon juice until smooth. Strain through a fine mesh strainer; discard solids.


  3. Pour mango liquid into pitcher. Add sugar syrup; stir until well combined. Divide mixture between 6 ice-filled glasses; top each glass with 1/2 cup sparkling water.
