Sweet Potato Brioche
Yield: 3 lb 14 oz
Ingredients:
Sponge4.5 oz Whole milk, lukewarm⅓ oz Instant yeast1 ea Egg6.8 oz Bread Flour
Main Dough1 lb 4 oz Bread Flour2 ½ oz Brown Sugar2 tsp Fine Kosher Salt10 oz Sweet Potato Purée3 ½ ea Eggs1 ea Egg Yolk8 oz Butter, softened and unsalted
Instructions:
Make a sponge with the milk, yeast, egg, and flour. Cover and proof in a warm place for about 20–30 minutes.
Once the sponge is ready, place it in a stand mixer fitted with a dough hook. Add all remaining ingredients, except the butter, and mix on low speed until the gluten is developed (5–8 minutes).
Add the butter in several additions. While mixing, turn the mixer to medium speed to fully incorporate the butter into the dough.
Place the dough on a lightly floured pan. Lightly dust the top with flour and wrap with plastic.
Let proof overnight.
If overnight proofing isn't possible, allow the dough to proof at room temperature, chill until firm, and then use as desired.
This dough can be used for rolls, loaf bread, and cinnamon rolls.
